For a smoother sauce, use an immersion blender to puree the sauce after simmering. Be careful when blending hot liquids! Adjust the amount of habanero sauce to your preference. Start with a smaller amount and add more to taste. If you can't find fresh guava, you can use guava paste (dulce de guayaba). Use about 4 ounces and reduce the brown sugar slightly. This sauce can be stored in an airtight container in the refrigerator for up to a week.
