Follow The Directions

01

Step
5 mins

Watermelon Puree: In a blender, combine the cubed watermelon and blend until completely smooth. (5 minutes)

02

Step
5 mins

Strain: Pour the watermelon puree through a fine-mesh strainer into a bowl to remove any pulp. Measure out 2 cups of the strained juice. (5 minutes)

03

Step
3 mins

Muddle Mint: In a large pitcher, place the fresh mint leaves. Pour in half of the strained watermelon juice (1 cup). Gently muddle the mint leaves using a muddler or the back of a wooden spoon to release their aromatic oils. Be careful not to over-muddle. (3 minutes)

04

Step
2 mins

Combine Ingredients: Add the remaining watermelon juice, freshly squeezed lime juice, white rum, and simple syrup to the pitcher. (2 minutes)

05

Step
2 mins

Chill and Serve: Fill the pitcher with ice cubes. Top with club soda and stir gently to combine. Garnish with lime wedges and watermelon slices, if desired. Serve immediately and enjoy! (2 minutes)

For a non-alcoholic version, simply omit the rum and add extra club soda.
Adjust the simple syrup to your desired level of sweetness. Taste as you go!
If you don't have simple syrup, you can make your own by combining equal parts sugar and water in a saucepan. Heat over medium heat, stirring until the sugar dissolves. Let cool completely before using.
Experiment with different types of mint, such as spearmint or chocolate mint, for a unique flavor profile.
For an extra festive touch, rim the glasses with sugar before serving.

I made this without the rum for a family-friendly version, and it was a hit! The watermelon flavor really shines through.
