For the best texture, use a mandoline to achieve uniformly thin slices of Vidalia onion. Feel free to experiment with different cheeses to customize the flavor profile. Gruyere or Fontina would be excellent additions. Serve with a variety of crackers, crusty bread, or vegetable sticks for dipping. The dip can be prepared ahead of time and stored in the refrigerator. Add 10-15 minutes to the baking time if baking from cold.
