In a large, heavy-bottomed soup pot or Dutch oven, heat olive oil over medium heat. Add carrots, onion, and celery. Cover and cook, stirring occasionally, until onions are translucent, about 5 minutes.

Gently stir in potatoes, kidney beans, and diced tomatoes. Cover and simmer for 30 minutes, or until the potatoes are tender and the lentils are fully cooked.

Stir in peanut butter until completely dissolved. Taste and adjust seasoning as needed. Simmer for another 5 minutes to allow the flavors to meld.

Remove bay leaf before serving. Serve hot, garnished with fresh herbs like parsley or cilantro, if desired.

For a richer flavor, use homemade vegetable broth.
Feel free to substitute other vegetables such as zucchini, bell peppers, or spinach.
A squeeze of fresh lemon juice adds brightness to the finished stew.
This stew tastes even better the next day, as the flavors have time to meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
For a spicier stew, add a pinch of red pepper flakes or a dash of your favorite hot sauce.
