Bring a large pot of lightly salted water to a rolling boil. Add the orzo and cook until al dente, about 8-10 minutes. Drain well and set aside. (10 minutes)

While the orzo cooks, heat the olive oil in a large skillet over medium heat. Add the chopped red onion, minced garlic, and diced carrot. Sauté for 2 minutes, until the onion begins to soften. (2 minutes)

Add the sliced zucchini to the skillet and continue to sauté for another 2 minutes, until slightly tender. (2 minutes)

Pour in 1 tablespoon of balsamic vinegar to deglaze the pan, scraping up any flavorful bits from the bottom. Reduce the heat to medium-low and season with salt and freshly ground black pepper to taste. (2 minutes)

Add the cooked orzo to the skillet with the vegetables. Stir in the remaining 1 tablespoon of balsamic vinegar and the fresh lemon juice. Toss to combine all the ingredients and heat through. (3 minutes)

For an extra layer of flavor, toast the orzo in a dry pan for a few minutes before cooking.
Feel free to add other vegetables like bell peppers or asparagus.
Garnish with fresh herbs like parsley or basil for a pop of color and freshness.
