Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the chopped onion-bell pepper mixture, shredded carrot, and zucchini. Sauté, stirring occasionally, until the vegetables are softened and slightly caramelized, about 6-8 minutes.

Pour in the vegetable broth and add the rinsed red lentils. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer gently until the lentils are tender and have absorbed most of the liquid, approximately 15-20 minutes. Stir occasionally to prevent sticking.

Stir in the diced tomatoes, chili powder, yellow mustard, cider vinegar, maple syrup, tomato paste, and vegan Worcestershire sauce. Season generously with salt and freshly ground black pepper to taste. Bring the mixture back to a simmer, then reduce the heat to low and cook uncovered, stirring occasionally, until the sauce has thickened to your desired consistency, about 10-15 minutes. Adjust seasonings as needed.
