In a 3-quart saucepan, combine the cubed potatoes and chicken broth. Bring to a vigorous boil over high heat, then reduce heat to medium-high, cover, and cook until the potatoes are fork-tender, about 10-12 minutes.

Carefully drain the potatoes, reserving the flavorful broth. Set aside at least 1/2 cup of the broth.

Return the drained potatoes to the saucepan. Add the half and half and butter. Using a potato masher or a ricer, mash the potatoes until smooth and creamy.

Gradually add the reserved broth, a little at a time, until you reach your desired consistency. Season generously with salt and freshly ground black pepper to taste. Serve immediately.

For an extra layer of flavor, try roasting a head of garlic and adding a few cloves to the potatoes while mashing.
Yukon Gold potatoes are recommended for their naturally creamy texture, but Russet potatoes can also be used (you may need to add more broth).
Do not overmix the potatoes, as this can lead to a gluey texture. Mash until just combined.
