In a saucepan, bring the water and salt to a rolling boil. Gradually whisk in the quick-cooking grits. Reduce the heat to medium-low, cover the saucepan, and let the grits simmer until they are tender and have absorbed most of the water, around 30 minutes. Add the cooked grits to the sausage and vegetable mixture in the casserole dish and stir well to combine. Press the mixture into an even layer. Gently pour the condensed cream of celery soup over the grits mixture, spreading it evenly. Sprinkle the shredded Cheddar cheese generously over the top. (Cook time: 40 minutes)

For a spicier kick, add a pinch of red pepper flakes to the sausage while cooking.
Try using different types of cheese, such as Gruyere or Pepper Jack, for a unique flavor profile.
This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
If you don't have cream of celery soup, cream of mushroom or cream of chicken can be substituted.
