In a bowl, whisk together chicken broth, cream of chicken soup, and dry sherry. Stir in oregano, parsley, and garlic powder. Pour the chicken broth mixture over the thighs in the skillet. Cover the skillet, reduce heat to medium-low, and simmer until the thighs are no longer pink inside and the juices run clear, around 30 minutes. An instant-read thermometer inserted into the center of the thighs should read at least 165 degrees F (74 degrees C). (40 minutes)

Remove the thighs from the skillet and let them rest for a few minutes before slicing. Serve the sliced thighs with the savory brown sauce from the skillet, spooned generously over the top. (5 minutes)

For a richer sauce, consider adding a tablespoon of butter to the skillet along with the olive oil.
If you prefer a thicker sauce, whisk a teaspoon of cornstarch with a tablespoon of cold water and stir it into the sauce during the last few minutes of simmering.
Serve over hot cooked rice, mashed potatoes, or egg noodles for a complete and satisfying meal.
Fresh herbs like thyme or rosemary can be added for a more nuanced flavor profile.
