Follow The Directions

01

Step
10 mins

Melt butter in a large stockpot or Dutch oven over low heat. Add celery, carrots, and onion. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.

02

Step
1 hrs

Stir in the chopped turkey, crumbled stuffing, chopped tomatoes, and minced parsley. Pour in the turkey stock. Increase the heat to bring the soup to a boil, then reduce heat to low and simmer, partially covered, for at least 1 hour, or up to 2 hours, to allow the flavors to meld.

03

Step
9 mins

While the soup simmers, bring a large pot of lightly salted water to a boil. Add the egg noodles and cook according to package directions, usually about 7-9 minutes, or until tender but still firm to the bite. Drain the noodles well.

04

Step

Divide the cooked egg noodles among deep serving bowls. Ladle the hot turkey stuffing soup over the noodles and serve immediately. Garnish with extra parsley, if desired.

For a richer flavor, use homemade turkey stock. If using store-bought broth, opt for low-sodium to control the saltiness of the soup.
Adjust the amount of stuffing to your liking. More stuffing will create a thicker soup.
Feel free to add other vegetables such as diced potatoes, green beans, or corn.
If you don't have fresh tomatoes, you can substitute a 14.5-ounce can of diced tomatoes, drained.
The soup can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will deepen as it sits. Add the cooked noodles just before serving to prevent them from becoming soggy.

I made this soup after Thanksgiving, and it was a huge hit with my family. Everyone loved the combination of flavors. I added a little bit of thyme, and it was amazing!
