Preheat oven to 350 degrees F (175 degrees C).

Heat a large frying pan over medium-high heat. Add 3 tablespoons olive oil, then sear the beef strips until browned on all sides, about 5-7 minutes. Transfer the seared beef to a 3-quart baking dish.

Add the remaining 2 tablespoons of olive oil to the frying pan. Sauté the sliced mushrooms, thinly sliced onion, and smashed garlic until softened, about 5 minutes. Remove from heat.

Stir in the red wine, tomato paste, flour, salt, pepper, and crumbled bay leaf into the pan with the mushroom mixture. Gradually whisk in the beef broth until well combined and smooth. Pour this luscious sauce over the beef in the baking dish.

Cover the baking dish tightly with aluminum foil. Bake in the preheated oven until the beef is wonderfully tender, approximately 45 minutes to 1 hour.

Remove from oven, discard the foil. Gently stir in the sour cream until well combined. Serve immediately over hot wide egg noodles or creamy mashed potatoes.

For an even richer flavor, try using cremini or shiitake mushrooms.
A splash of Worcestershire sauce adds a wonderful depth of umami to the sauce.
If you don't have red wine on hand, you can substitute with additional beef broth and a tablespoon of balsamic vinegar.
Serve with a sprinkle of fresh parsley or dill for added freshness.
