Stir in the fresh lime juice and lemon extract until well combined.

Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions. This recipe may take slightly longer to thicken than traditional ice cream (approximately 25-35 minutes).

Once the ice cream has reached a soft-serve consistency, add the broken graham cracker pieces to the ice cream maker. Churn for an additional 5 minutes to evenly distribute the graham cracker pieces throughout the ice cream.

Transfer the ice cream to an airtight container and freeze for at least 4 hours, or preferably overnight, to allow it to fully solidify.

For the most authentic Key lime flavor, use fresh Key lime juice if available. Otherwise, regular lime juice works well.
Adjust the amount of graham cracker to your preference. For a more pronounced graham cracker flavor, add a few more crackers.
To prevent ice crystals from forming, press a piece of plastic wrap directly onto the surface of the ice cream before sealing the container for freezing.
If you prefer a smoother texture, strain the lime juice before adding it to the mixture to remove any pulp.
This ice cream can also be used to make Key lime pie popsicles. Simply pour the mixture into popsicle molds before freezing.
