For the most authentic Key lime flavor, use fresh Key lime juice if available. Otherwise, regular lime juice works well. Adjust the amount of graham cracker to your preference. For a more pronounced graham cracker flavor, add a few more crackers. To prevent ice crystals from forming, press a piece of plastic wrap directly onto the surface of the ice cream before sealing the container for freezing. If you prefer a smoother texture, strain the lime juice before adding it to the mixture to remove any pulp. This ice cream can also be used to make Key lime pie popsicles. Simply pour the mixture into popsicle molds before freezing.
