Follow The Directions

01

Step

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.

02

Step

Stir in the chopped carrots, minced garlic, ground turmeric, salt, and freshly ground black pepper. Cook and stir until the spices are fragrant and the flavors have melded, about 7 minutes.

03

Step

Add the diced and rinsed cabbage to the pot and mix well to combine with the other ingredients.

04

Step

Cover the pot, reduce the heat to medium-low, and cook until the cabbage is tender but still retains a slight crispness, about 20 minutes. If the vegetables appear dry during cooking, add water a tablespoon at a time to prevent sticking.

For a richer flavor, try using clarified butter (ghee) instead of vegetable oil.
Feel free to add other vegetables like potatoes or green beans for a heartier dish.
Serve alongside other Ethiopian dishes on injera bread for an authentic culinary experience.
