In a small saucepan, whisk together the reserved pineapple juice, sugar, beaten egg, vinegar, and flour until smooth. Place the saucepan over medium-low heat and cook, stirring constantly, until the sauce thickens and coats the back of a spoon. This should take approximately 5-7 minutes. Remove from heat and transfer the thickened sauce to a separate medium bowl. Cover with plastic wrap, pressing the wrap directly onto the surface of the sauce to prevent a skin from forming. Refrigerate for a minimum of 8 hours, or ideally overnight. (Cook Time: 5-7 minutes, Chill Time: 8-24 hours)
