For an extra tender crust, use leaf lard instead of shortening. Make sure all ingredients are as cold as possible. This prevents the shortening from melting and ensures a flaky crust. If the dough seems too dry, add ice water, one teaspoon at a time, until it comes together. When rolling out the dough, work on a lightly floured surface and roll from the center outwards, rotating the dough as you go. Avoid over-handling the dough.
