For an extra flaky crust, ensure all ingredients are very cold. You can even chill the flour and bowl beforehand. If the dough becomes too warm while you are working with it, return it to the refrigerator to chill for a few minutes. For a blind-baked crust, prick the bottom of the crust with a fork before baking to prevent it from puffing up. You can also weigh it down with pie weights or dried beans.
