Follow The Directions

01

Step

Combine the watermelon, tomatoes, red bell pepper, cucumber, shallot, lime juice, apple cider vinegar, salt, and pepper in a high-powered blender. (Prep time: 15 minutes)

02

Step

Blend on high speed until completely smooth, approximately 20-30 seconds. (Blend time: 30 seconds)

03

Step

Transfer the gazpacho to an airtight container and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld and the soup to thoroughly chill. (Chill time: 60 minutes)

04

Step

Before serving, gently stir the gazpacho, as it may naturally separate. Divide the chilled soup among four bowls. (Prep time: 5 minutes)

05

Step

Garnish each bowl with crumbled feta cheese and minced fresh cilantro. Serve immediately and enjoy!

For an extra layer of flavor, consider adding a pinch of cayenne pepper or a drizzle of olive oil before serving.
If you don't have fresh cilantro on hand, mint or basil could be a good substitute
Taste and adjust seasonings as needed before chilling. The flavors will intensify as the gazpacho sits.
To prevent the gazpacho from becoming too watery, use the ripest (but not overripe) watermelon available.
