Follow The Directions

01

Step

Prepare your ingredients: Finely chop the onion, crush the garlic, and tear the basil leaves. (5 minutes)

02

Step

In a medium saucepan, heat the extra-virgin olive oil over low heat. Add the chopped onion and crushed garlic. Sauté gently until the onion becomes soft and translucent, releasing its sweet aroma, about 8-10 minutes. Be careful not to brown the garlic; you want to infuse the oil, not burn it.

03

Step

Pour in the passata, add the torn basil leaves, and season with sea salt and freshly ground black pepper to taste. Stir well to combine. (2 minutes)

04

Step

Bring the sauce to a gentle simmer over medium-low heat. Cover the saucepan and let it simmer for at least 20-25 minutes, or up to an hour for a richer flavor. Stir occasionally to prevent sticking and ensure even cooking. The longer it simmers, the more the flavors will meld and deepen. (25 - 60 minutes)

05

Step

Before serving, taste the sauce and adjust the seasoning if necessary. Remove the garlic cloves if desired, or leave them in for a more robust garlic flavor.

For an even deeper flavor, add a pinch of red pepper flakes during the sautéing process for a subtle kick.
A bay leaf added during simmering can impart a delicate herbal note; remember to remove it before serving.
If you prefer a smoother sauce, use an immersion blender to lightly puree the sauce after simmering. Be careful not to over-blend.
This sauce can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Thaw completely before reheating.
