Follow The Directions
01
Step
30 mins
In a blender, combine 3 pints of hulled strawberries, half of the cucumber, half of the onion, 1/4 cup of cilantro, and 1/4 cup of parsley. Blend on high speed until smooth and pureed. (Approximately 30 seconds). Pour the mixture into a large bowl.
02
Step
5 mins
To the bowl with the strawberry puree, add the remaining 1 pint of chopped strawberries, remaining cucumber, remaining onion, remaining cilantro, remaining parsley, minced green onions, minced jalapeno pepper, red wine vinegar, lemon juice, olive oil, salt, minced garlic, dried tarragon, dried basil, hot pepper sauce, and ground black pepper. Stir well to combine all ingredients thoroughly.
03
Step
3 mins
Gently fold in the cubed avocado. Avoid over-stirring to maintain the avocado's texture.
04
Step
2 hrs
Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours to allow the flavors to meld and the gazpacho to chill completely.
For a smoother gazpacho, strain the pureed strawberry mixture through a fine-mesh sieve before adding the remaining ingredients.
Adjust the amount of jalapeno pepper to control the level of heat. Remove the seeds and membranes for a milder flavor.
Taste and adjust seasonings (salt, lemon juice, hot sauce) as needed before chilling.
Garnish with a drizzle of olive oil, a sprig of fresh cilantro, or a few extra cubes of avocado before serving.
