When the oil is hot, dump in the garlic mixture, and stir-fry for about 15 seconds. Pour in the soy sauce mixture, and bring to a simmer. Stir in the eggplant puree, cooking just until heated through. Remove to a serving dish, and stir in the sesame oil. Allow to cool, and serve at room temperature as a spread for the bread.

For a smokier flavor, roast the eggplant directly over an open flame on a gas stovetop, turning occasionally, until the skin is charred and the flesh is soft.
Adjust the amount of red pepper flakes to your preference. For a milder flavor, omit them altogether.
This spread can be made ahead of time and stored in the refrigerator for up to 3 days. Allow it to come to room temperature before serving.
Try serving this spread with pita bread, crackers, or raw vegetables for a healthy and delicious snack.
