In a large bowl, combine the chopped onion, roasted red peppers, whiskey, and minced garlic. Gently mix these ingredients together. (5 minutes)

Rub half of the chipotle mixture evenly over the outside of the turkey, ensuring it's well coated. Place the remaining chipotle mixture inside the turkey cavity, on top of the onion-pepper mixture. (5 minutes)

Place the turkey into the roasting bag. Seal the bag tightly according to the manufacturer's instructions, and then place the bag into a large roasting pan. (3 minutes)

Bake in the preheated oven for approximately 3 1/2 hours, or until the turkey is no longer pink at the bone and the juices run clear when pierced with a fork. To ensure it's cooked, an instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read at least 165 degrees F (74 degrees C). (3.5 hours)

Remove the turkey from the oven and let it rest in a warm area for 10 to 15 minutes before slicing and serving. This resting period allows the juices to redistribute, resulting in a more tender and flavorful turkey. (15 minutes)

For an even deeper flavor, consider brining the turkey for 12-24 hours before roasting. This will help to keep the turkey moist and tender.
If you don't have a roasting bag, you can roast the turkey uncovered in the roasting pan, but be sure to baste it with pan juices every 30 minutes to prevent it from drying out.
Adjust the amount of chipotle peppers to your preferred spice level. For a milder flavor, use only half of the can.
Don't discard the pan drippings after roasting! They make a fantastic base for gravy.
