Press 2 cups of the crumb mixture into the prepared baking dish, pressing down lightly; set the remaining crumb mixture aside. (5 minutes)

In the same large bowl, combine the strawberries and rhubarb. Drizzle with lemon juice; toss to combine. In a small bowl, combine 1/3 cup sugar and cornstarch until well combined. Sprinkle over the strawberry-rhubarb filling; mix gently. (10 minutes)

Pour the filling into the baking dish on top of the crumb layer; crumble the reserved crumb mixture evenly over the filling. (5 minutes)

Bake in the preheated oven until the top is browned and the filling is bubbly, about 45 minutes. Cool on a wire rack before cutting into bars. (50 minutes)

For a richer flavor, use brown butter for the crumb topping.
If rhubarb is particularly tart, consider adding an extra tablespoon of sugar to the filling.
Allow the bars to cool completely before cutting for cleaner slices.
Store leftover bars in an airtight container at room temperature for up to 3 days.
