Step

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add half of the diced onion and half of the minced garlic. Cook, stirring occasionally, until the onion becomes translucent, about 5 minutes.

Add the shredded cooked chicken to the pot. Season with chili powder, ground cumin, and ground coriander. Cook, stirring frequently, until the spices are fragrant and coat the chicken, about 1 minute.

Stir in the remaining diced onion and minced garlic, diced tomatoes and green chiles, tomato sauce, chicken broth, chili beans, minced chipotle peppers in adobo sauce, salt, and ground black pepper. Bring the mixture to a boil, then reduce the heat to low.

Cover and let simmer, stirring occasionally, until the chili has thickened and the flavors have melded together, approximately 1 to 2 hours. Taste and adjust seasonings as needed.

For a richer flavor, use homemade chicken broth. Adjust the amount of chipotle peppers to control the level of spiciness. Serve hot, garnished with your favorite toppings, such as shredded cheddar cheese, sour cream, oyster crackers, or Fritos® chips.
