Combine the Wet and Dry: Transfer the mixture to a bowl and add the orange juice, white vinegar, achiote powder, salt, cumin, lime zest, ancho chile powder, and black pepper. Stir well to combine. (2 minutes)

Slow Cook the Pork: Place the cubed pork loin in a slow cooker. Pour the sauce over the pork, ensuring it is fully coated. Cover and cook on Low for 7 to 9 hours, or until the pork is very tender and easily shreds. (7-9 hours)

Warm the Tortillas: About 35 to 40 minutes before the pork is done, begin warming the corn tortillas. (5 minutes)

Crisp the Tortillas: Heat the canola oil in a saucepan over medium-high heat. Cook the tortillas one at a time, until brown spots appear and they are slightly crispy, about 30 seconds to 1 minute per side. Plate tortillas in stacks of two for each taco. (15 minutes)

Shred and Serve: Once the pork is cooked, shred it using two forks. Mix the shredded pork with the sauce in the slow cooker, ensuring it is well coated. Use a slotted spoon to scoop the pork onto the prepared tortillas. Top each taco with a portion of diced fresh pineapple, chopped fresh cilantro, and diced white onion. Serve immediately and enjoy! (10 minutes)

For a spicier kick, add an extra chile de arbol or a pinch of cayenne pepper to the marinade.
If you don't have a food processor, you can finely chop the ingredients and mix them together.
For best results, marinate the pork for at least 4 hours, or even overnight, before slow cooking.
Garnish with lime wedges and crema or sour cream for a more authentic touch.
To prevent tortillas from becoming soggy, warm them just before serving.
Leftover al pastor pork is delicious in quesadillas, burritos, or even as a topping for nachos!
