Combine all ingredients in a 6-quart or larger slow cooker. (5 minutes)

Cover and cook on High for 2-3 hours, or on Low for 4-6 hours, or until the chicken is cooked through and tender. An instant-read thermometer inserted into the center of a chicken piece should read at least 165°F (74°C). (See notes). (1 minute)

Remove and discard the bay leaves and cinnamon stick before serving. (1 minute)

Serve hot over cooked rice or naan bread, garnished with fresh cilantro and a dollop of sour cream or plain yogurt. (2 minutes)

For a richer flavor, lightly brown the chicken pieces in a skillet before adding them to the slow cooker. This step is optional but adds depth to the curry.
If you prefer a spicier curry, add a pinch of cayenne pepper or a finely chopped chili pepper to the slow cooker.
Adjust cooking time depending on your slow cooker. Check the chicken periodically to ensure it doesn't overcook and become dry.
For a smoother sauce, you can use an immersion blender to lightly blend the curry after removing the bay leaves and cinnamon stick. Be careful not to over-blend.
