Cook until tender: Bring the water to a boil, then cover the pot and reduce heat to medium. Steam the artichokes until the outer leaves can be easily pulled off. (Cook time: 20-30 minutes)

To test for doneness, pierce the heart of the artichoke with a knife. It should be tender.
