For an even richer flavor, try using Gruyere or sharp cheddar cheese instead of Gouda. Fresh herbs can be substituted for dried herbs. Use about 1 tablespoon of fresh herbs for every teaspoon of dried herbs. These waffles can be made ahead of time and frozen. Simply reheat them in a toaster or oven until warm and crisp. Feel free to add other savory ingredients like cooked bacon bits, chopped chives, or sun-dried tomatoes to the batter.
