Follow The Directions

01

Step
5 mins

Preheat your oven to a roaring 500°F (260°C). This high heat is key for optimal caramelization. (5 minutes)

02

Step
7 mins

In a skillet over medium heat, melt the butter. Continue to cook, whisking constantly, until the butter transforms into a beautiful light brown color and emits a nutty aroma. Be vigilant to prevent burning! Remove from heat immediately. (5-7 minutes)

03

Step
2 mins

In a large bowl, toss the cauliflower florets with the browned butter and salt, ensuring each piece is well coated. Spread the cauliflower in a single layer on a baking sheet. (2 minutes)

04

Step
15 mins

Roast in the preheated oven until the cauliflower is tender and slightly charred, about 15 minutes. Keep a close eye on it to prevent burning, as ovens can vary.

05

Step
2 mins

Remove the roasted cauliflower from the oven and immediately toss it with the thinly sliced red onion, grated Pecorino Romano cheese, and fresh mint. Drizzle with lemon juice, and season with additional salt to taste. Serve immediately for the best flavor and texture. (2 minutes)

For an extra layer of flavor, try adding a pinch of red pepper flakes along with the salt.
If you don't have Pecorino Romano, Parmesan cheese makes a good substitute.
The brown butter can be made ahead of time and stored in the refrigerator. Just re-melt it before using.
Feel free to experiment with other herbs, such as parsley or chives, in addition to or instead of the mint.
