Preheat the oven to 400 degrees F (200 degrees C). (5 minutes)

In a large bowl, combine Brussels sprouts, apples, avocado oil, bacon, maple syrup, black pepper, sea salt, thyme, marjoram, rosemary, lavender, fennel seeds, and oregano. Toss until everything is evenly coated. (5 minutes)

Spread the mixture in a single layer on a baking sheet. (2 minutes)

Roast in the preheated oven until the Brussels sprouts are tender and the bacon is crisp, approximately 30 to 35 minutes.

For extra crispiness, don't overcrowd the baking sheet. Use two sheets if necessary.
Feel free to substitute regular bacon for turkey bacon, adjusting cooking time as needed.
A splash of balsamic vinegar after roasting adds a delightful tang.
Adjust the herbs to your liking. Fresh herbs can also be used; add them in the last 10 minutes of roasting.
