Step

In a mixing bowl, whisk together 2 cups melted coconut oil, 1 cup unsweetened cocoa powder, 1/2 cup melted raw honey, and 2 tablespoons stevia powder until the mixture is smooth and well combined. (Approximately 5 minutes)

In a food processor, blend together 0.75 cup strawberries, 1/4 cup coconut oil, 1/4 cup sunflower seed butter, 2 tablespoons raw honey, the juice of 1/2 lemon, the seeds scraped from 1 vanilla bean, and 1/4 teaspoon Himalayan rock salt until completely smooth. Transfer the strawberry filling to a bowl and refrigerate until ready to use. (Approximately 10 minutes)

Step

Pour half of the chocolate mixture into the bottoms of truffle molds or ice cube trays, filling each cavity partially. Place the molds in the freezer until the chocolate is partially hardened. This should take about 10 minutes. Keep the remaining chocolate mixture at room temperature to maintain its consistency.

Spoon 1 1/2 teaspoons to 1 tablespoon of the chilled strawberry filling over the partially frozen chocolate in each mold. Top each mold with the remaining chocolate mixture, filling the molds completely. Return the truffle molds to the freezer and freeze until the truffles are fully set. This should take approximately 15 minutes.

For a richer flavor, use dark cocoa powder.
If you don't have truffle molds, a mini muffin tin lined with paper liners works well too.
Store the truffles in the refrigerator or freezer to maintain their shape and texture.
Try adding a pinch of cayenne pepper to the chocolate mixture for a spicy kick.
