Engage the 'Sauté' function on your Instant Pot®. Add the chopped bacon and cook until deeply browned and delightfully crispy, approximately 6 minutes. Transfer the bacon to a paper towel-lined baking sheet to drain excess grease, preserving the rendered bacon fat in the pot.

Carefully drain off a portion of the liquid from the canned baked beans, leaving about 1 inch of liquid in each can. Add the beans, remaining liquid, ketchup, brown sugar, and dry mustard to the Instant Pot®, incorporating the crispy bacon. Stir well to combine all ingredients evenly.

Secure the Instant Pot lid, ensuring the valve is set to the 'Sealing' position. Select the 'High Pressure' setting and set the timer for 3 minutes. Allow 10-15 minutes for the Instant Pot to reach full pressure.

Once the cooking cycle is complete, carefully perform a quick pressure release according to the manufacturer's instructions, about 5 minutes. Once the pressure is fully released and the valve has dropped, unlock and carefully remove the lid. Stir the baked beans before serving.

For a deeper smoky flavor, consider using smoked bacon.
Adjust the amount of brown sugar to your preference. Start with less and add more to taste.
A splash of apple cider vinegar or Worcestershire sauce can add extra depth of flavor.
These beans are fantastic served with grilled meats, cornbread, or as a side dish at potlucks.
