Drain the liquid from the can of gandules into a measuring cup. Add enough water to reach a total of 2 1/2 cups of liquid. Pour this mixture, along with the gandules, into the Instant Pot. Stir thoroughly. Season with salt and pepper to your liking.

Secure the lid, ensuring it's properly locked. Select the 'High Pressure' setting and set the timer for 17 minutes. Allow 10-15 minutes for the pressure to build inside the pot.

Once the cooking cycle is complete, allow the pressure to release naturally for approximately 15 minutes. Carefully release any remaining pressure using the quick-release method, around 5 minutes. Unlock and remove the lid.

For an extra layer of flavor, consider adding a bay leaf during the pressure cooking stage. Remember to remove it before serving.
If you prefer a drier Arroz con Pollo, reduce the amount of liquid by 1/4 cup.
Adjust the salt and pepper to your taste. The sazon seasoning and salt pork already contribute a good amount of saltiness.
Garnish with fresh cilantro or parsley for a pop of color and freshness.
