While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add chopped onions and bell peppers, sautéing until the onions become translucent (about 5 minutes). Add minced garlic and ginger, cooking until fragrant (approximately 2 minutes). Remove from heat.

Stir in reduced-sodium soy sauce, chopped fresh cilantro, and hot chile paste to the skillet with the vegetables. Adjust the amount of chili paste to your desired level of spiciness.

Add the skillet mixture to the pot with the quinoa and edamame. Simmer over low heat, stirring occasionally, until any excess broth has been absorbed and the flavors have melded together (approximately 5 minutes).

For a gluten-free option, ensure you are using gluten-free soy sauce.
Feel free to add other vegetables like carrots, zucchini, or mushrooms for added nutrients and flavor.
Taste and adjust seasonings as needed. You may want to add a squeeze of lime juice for extra brightness.
