Assemble Tacos: Coat the inside of a pie iron with cooking spray to prevent sticking. Place one corn tortilla on one side of the pie iron. Add a generous scoop of seasoned ground beef, sprinkle with Monterey Jack cheese, and top with chopped onion. Place another corn tortilla on top to complete the taco. Close the pie iron securely.

Cook Over Coals: Place the pie iron directly onto the moderate campfire coals. Cook until the tortillas are crisp, browned, and the filling is heated through. Flip the pie iron occasionally to ensure even cooking on both sides. (Approximately 5-7 minutes per side)

Serve: Carefully remove the pie iron taco from the heat. Open the pie iron and slide the taco out. Serve immediately with shredded lettuce, diced tomato, salsa, and sour cream.

For a vegetarian option, substitute the ground beef with seasoned black beans or lentils.
Experiment with different cheeses like cheddar, pepper jack, or a Mexican blend.
Add a layer of refried beans or guacamole for extra flavor and creaminess.
Be cautious when handling the hot pie iron. Use heat-resistant gloves or tongs.
Ensure the campfire coals are not too hot, as this can burn the tortillas before the filling is heated through.
