For a richer flavor, consider using homemade chicken stock. You can also add other vegetables like celery, zucchini, or green beans.
If you prefer a thicker soup, mash some of the potatoes against the side of the pot.
Leftover cooked chicken works beautifully in this recipe. Simply add it during the last 15 minutes of simmering.
