Follow The Directions

01

Step
12 mins

Cook the Pasta: Bring a large pot of lightly salted water to a boil. Add penne pasta and cook according to package directions until al dente (approximately 9-13 minutes). Drain and set aside.

02

Step
5 mins

Sauté Aromatics: While the pasta is cooking, heat the vegetable oil in a medium saucepan over medium heat. Add the mango, red onions, and diced chili pepper. Cook, stirring occasionally, until the onions are softened and translucent (about 5 minutes).

03

Step
10 mins

Simmer the Sauce: Add the crushed tomatoes and red wine to the saucepan. Stir in the bay leaf, cloves, and cinnamon stick. Bring to a simmer and cook, stirring occasionally, for about 10 minutes, allowing the flavors to meld and the sauce to slightly thicken.

04

Step
2 mins

Finish the Sauce: Remove the bay leaf, cloves, and cinnamon stick from the sauce. Season with salt to taste. Stir in the honey and red wine vinegar.

05

Step
1 mins

Assemble and Serve: Serve the mango chile sauce over the cooked penne pasta. Garnish with fresh cilantro and sliced black olives. Enjoy immediately!

For a smoother sauce, you can use an immersion blender to partially blend the mango mixture before adding the honey and vinegar.
Adjust the amount of chili pepper to your preferred level of spiciness.
Fresh mango is best, but you can use frozen mango in a pinch. Thaw it completely before using.
A pinch of red pepper flakes can be added for extra heat.
