In a saucepan over medium-low heat, combine brown sugar, butter, apricot preserves, cinnamon, nutmeg, ginger, vanilla extract, and pecans. Stir until sugar has dissolved and sauce has thickened, about 5 minutes. Season with salt and pepper to taste. If sauce becomes too thick, thin with reserved yam liquid. (8 minutes)

Transfer browned pork chops to the prepared baking dish, arranging them in a single layer. (2 minutes)

Spoon the yam mixture evenly over the pork chops, ensuring each chop is nicely covered. (4 minutes)

Bake in the preheated oven until pork chops are cooked through and no longer pink in the center, approximately 30 to 45 minutes. Let rest for 10 minutes before serving. (55 minutes)

For a richer flavor, use dark brown sugar.
If you don't have apricot preserves, peach preserves or orange marmalade can be substituted.
To add a little heat, a pinch of cayenne pepper can be added to the sauce.
Fresh sweet potatoes can be used in place of canned. Simply peel, cube, and parboil until slightly tender before adding to the sauce.
