Place chocolate chips in a microwave-safe bowl. Microwave in 30-second increments, stirring in between, until chocolate is melted and smooth. Stir in coconut oil until melted and well incorporated. (5-7 minutes)

Spoon about 1 1/2 teaspoons of chocolate each into 12 ice cube molds. (5 minutes)

Place peanut butter in a ziplock bag and pipe about 1 1/2 teaspoons over the chocolate. Top with the same amount of caramel and divide peanuts evenly over the tops of the caramel. Top each one with remaining melted chocolate. (15 minutes)

Place ice cube tray in freezer for 4 hours or overnight. (4+ hours)

For a richer flavor, use dark chocolate chips.
If you don't have coconut oil, you can use a teaspoon of butter or vegetable oil.
To make the bites extra special, sprinkle a pinch of sea salt on top before freezing.
Ensure the caramel is thick enough to hold its shape when piped. If it's too runny, chill it in the refrigerator for 15-20 minutes before using.
Use a good quality chocolate for the best flavour.
