Simmer and Finish: Bring the liquid to a simmer, then cover the skillet and reduce the heat to medium-low. Cook for 5 minutes. Turn the chicken breasts over and continue cooking until the chicken is no longer pink in the center and the juices run clear when pierced with a fork, about 5 more minutes. An instant-read thermometer inserted into the thickest part of the chicken should read at least 165°F (74°C). (10 minutes)

For a richer gravy, consider using heavy cream instead of water.
Thickening the gravy: If the gravy isn't thick enough, mix a teaspoon of cornstarch with a tablespoon of cold water to create a slurry. Stir the slurry into the gravy and simmer for a minute or two until thickened.
