Follow The Directions

Step

Heat 3 tablespoons of vegetable oil in a large skillet or wok over medium heat. (1 minute)

Carefully add the paneer cubes and fry until golden brown on all sides. (7-10 minutes)

Remove the paneer from the skillet and place on a plate lined with paper towels to drain excess oil. Reserve the oil in the skillet.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the chopped onions, bell peppers, ginger, and garlic.

Stir-fry until the onions are lightly browned. (5 minutes)

Add the garam masala, turmeric, and fennel. Cook and stir for about 30 seconds, until fragrant.

Stir in the tomato puree, ketchup, and salt. Cook until the tomatoes are tender and the oil starts to separate from the gravy. (5 minutes)

Pour in the water and stir well to combine.

Return the fried paneer to the skillet. Raise the heat to high and cook until the gravy thickens to your desired consistency. (10 minutes)

Garnish with freshly chopped cilantro before serving. Serve hot with rice or naan.

For a richer flavor, marinate the paneer in a mixture of yogurt, ginger-garlic paste, and a pinch of turmeric for 30 minutes before frying.
Adjust the amount of garam masala and other spices to your preference.
If you don't have fresh tomatoes, you can use canned crushed tomatoes.
Serve hot with roti, naan, or rice.
