Prepare the Orange Zest: Place orange zest in a saucepan and cover with water. Bring to a boil and cook for 5 minutes to soften and mellow the zest. (5 minutes)

Candied Orange Zest: Strain the zest using a mesh strainer, discarding the cooking liquid. Return the zest to the saucepan. Add ½ cup of sugar and ¼ cup of water. Bring to a boil, then reduce the heat to medium-low. Cook, stirring constantly, until the water has evaporated and the zest is candied and slightly sticky. Cool the zest until it is lukewarm. (15-20 minutes)

Preheat and Prepare: Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan to prevent sticking. (5 minutes)

Combine Dry and Wet Ingredients: In a large bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk together the remaining 1 cup of sugar and the egg until light and frothy. Stir in the milk, melted butter, and the cooled candied orange zest until well combined. (5 minutes)

Combine and Bake: Gently stir the wet ingredients into the dry ingredients just until moistened. Be careful not to overmix. Pour the batter into the prepared loaf pan and spread evenly. (2 minutes)

Bake: Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. The bread should be golden brown on top. (55-65 minutes)

Cool and Serve: Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely. Slice and serve. (10 minutes)

For a more intense orange flavor, use the zest of organic oranges.
To prevent the top from browning too quickly, tent the loaf with foil during the last 15-20 minutes of baking.
This bread is best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
