Heat olive oil in a large Dutch oven or pot over medium heat. Add onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.

Add chicken, crushed tomatoes, carrots, celery, chicken broth, olives, raisins, ginger, salt, paprika, cumin, turmeric, oregano, cinnamon, and cayenne pepper. Stir well to combine. (2 minutes)

Bring the mixture to a boil, then reduce heat to low, cover, and simmer until chicken is cooked through and flavors have melded, 25 to 35 minutes.

Stir in lemon juice. (1 minute)

For a richer flavor, brown the chicken pieces in the pot before adding the vegetables.
