Flip the potatoes occasionally, ensuring they cook evenly until golden brown and cooked through, about 15-20 minutes.

Take the bottom edge closest to you and fold it up and over the filling, tucking it tightly against the sides. Continue rolling the burrito up towards the top edge, forming a tight cylinder. Place the finished burrito seam-side down on a plate. Repeat with the remaining ingredients.

For extra flavor, consider adding a pinch of cumin or oregano to the potatoes while they are frying.
If you prefer a spicier burrito, use hot Hatch green chiles or add a pinch of cayenne pepper to the sauce.
To keep the burritos warm while you assemble the rest, wrap them individually in foil or place them in a preheated oven at 200°F.
Feel free to customize the fillings to your liking. Other great additions include chorizo, black beans, or pico de gallo.
