Follow The Directions

01

Step
40 mins

In a pot, combine water and mung beans. Bring to a boil, then reduce heat and simmer until beans are very soft, approximately 40 minutes. Mash the beans to create a creamy consistency; set aside.

02

Step
7 mins

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and minced garlic; sauté until softened and fragrant, about 5-7 minutes. Add the cubed pork loin; season with salt and freshly ground black pepper. Cook, stirring occasionally, until the pork is lightly browned, about 3 minutes.

03

Step
5 mins

Gently stir in the peeled and deveined prawns; cook until they turn pink and opaque, about 2 minutes. Add the diced tomato and cook for an additional 3 minutes, allowing the flavors to meld.

04

Step
5 mins

Reduce the heat to low. Pour in the chicken broth and simmer for 5 minutes, stirring occasionally to allow the flavors to meld.

05

Step
5 mins

Add the mashed mung beans to the pot, mixing well to combine with the broth and other ingredients. Cook for an additional 5 minutes, stirring frequently to prevent sticking. If the soup becomes too thick, add more chicken broth or water to reach your desired consistency.

06

Step
2 mins

Stir in the fresh spinach leaves and cook until they wilt, about 2 minutes. Taste and adjust seasoning as needed.

For a richer flavor, consider using pork broth instead of chicken broth.
If you can't find fresh spinach, frozen spinach works well too. Be sure to thaw and squeeze out excess water before adding it to the soup.
For a vegetarian version, omit the pork and prawns, and use vegetable broth instead of chicken broth. You can add other vegetables like carrots, potatoes, or sweet potatoes for added heartiness.
