Prepare the Pork: In a large skillet, cook the ground pork over medium heat until browned and no longer pink. Drain any excess fat. (Approximately 5-7 minutes)

Combine the Filling: In a large mixing bowl, combine the cooked ground pork, chopped shrimp, green onions, ginger, and water chestnuts. Add the cornstarch, garlic salt, and sugar. Mix well. Then, stir in the dry sherry, chili oil, soy sauce, and sesame oil until everything is evenly incorporated. (Approximately 5 minutes)

Fill and Shape the Wontons: Place about one teaspoon of the mixture in the center of each wonton wrapper. Bring the opposite corners of the wrapper together to form a triangle. Moisten the edges with egg white and pinch firmly to seal. You can also bring the two bottom corners of the triangle together, overlapping them slightly, and sealing with more egg white to create a classic wonton shape. (Approximately 30-45 minutes, depending on your speed)

Cook the Wontons: Bring a large pot of water to a rolling boil. Carefully place the wontons into the boiling water, being careful not to overcrowd the pot. (Work in batches if necessary.) When the wontons float to the surface, add a cup of cold water to the pot and allow the water to return to a boil. Once the water is boiling again and the wontons are floating, they are cooked through. Remove the wontons from the boiling water with a slotted spoon. (Approximately 5-7 minutes per batch)

Serve: Serve immediately in a bowl of rich, homemade chicken broth with baby bok choy or other leafy greens for a complete and comforting meal. Alternatively, pan-fry or deep-fry for a crispy appetizer.

For a vegetarian option, substitute the pork and shrimp with finely chopped mushrooms and tofu.
To prevent the wontons from sticking together, lightly dust them with cornstarch after shaping.
Wontons can be made ahead of time and frozen. Place the uncooked wontons on a baking sheet lined with parchment paper and freeze until solid. Then, transfer them to a freezer bag for longer storage. Cook directly from frozen, adding a few extra minutes to the cooking time.
