Follow The Directions

01

Step

Season beef with cayenne pepper, kosher salt, and pepper. (Prep time: 5 minutes)

02

Step

Heat peanut oil in a large, heavy-bottomed pan or Dutch oven over high heat. Add beef in batches, being careful not to overcrowd the pan, and brown for 3 minutes on each side. Turn off the heat and transfer beef to a plate. (Cook time: 10-12 minutes)

03

Step

Let the pan cool slightly, 1 to 2 minutes. Add butter and melt butter in the residual heat. Turn the heat to medium and add mushrooms, cut-sides down. Cook until mushrooms are light brown, 3 to 4 minutes. Flip and continue to cook until golden, 2 to 3 minutes more. Add onion and season with salt; cook onion until slightly golden, 3 to 4 minutes. (Cook time: 12-15 minutes)

04

Step

Pour sake into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in chicken broth, miso, maple syrup, and ketchup, and bring to a simmer. Add browned beef, mushrooms, and any accumulated mushroom juices. (Prep time: 5 minutes)

05

Step

Reduce the heat to low or medium-low, cover, and simmer until meat is fork-tender, 2 to 3 hours, turning beef halfway through cooking time. (Cook time: 2-3 hours)

06

Step

Stir in green onions, chile pepper, and vinegar. Cover and cook for 5 minutes more. Taste and adjust seasonings. (Cook time: 5 minutes)

For a richer flavor, consider using a combination of red and white miso.
If you don't have sake, dry sherry or white wine can be used as a substitute.
Serve over creamy mashed potatoes, steamed rice, or your favorite noodles. Garnish with extra green onions and a sprinkle of sesame seeds for an elegant touch.

The beef was incredibly tender, and the mushrooms were perfectly caramelized.

The maple syrup adds just the right amount of sweetness to balance the savory miso.

Next time, I'll try it with shiitake mushrooms for a different flavor profile.

I added a star anise to the braising liquid for an extra layer of complexity.
