Prepare the Cranberry-Onion Relish: Heat oil in a 12-inch skillet over medium-high heat. Add onions and sauté until deeply browned, about 10-12 minutes. Introduce the rosemary and cloves, continuing to sauté until fragrant, approximately 1-2 minutes more. Stir in the cranberry sauce and simmer until heated through. Remove from heat and set aside to cool. (The relish can be made up to 2 weeks in advance, cooled, covered, and refrigerated.)

Assemble the Sandwiches: Working in batches, lay out the rye bread slices on a clean work surface. Spread each slice with about 1/4 teaspoon of Dijon mustard and 1 teaspoon of cranberry relish. On half of the bread slices, layer a portion of ham, Swiss cheese, and a few leaves of arugula (if using). Top with the remaining bread slices.

Finishing Touch: Halve each sandwich diagonally, securing each half with a toothpick. (Assembled sandwiches can be covered with a damp paper towel and plastic wrap, and kept at room temperature for up to 2 hours before serving.)

For a vegetarian option, substitute the ham with thinly sliced roasted vegetables like zucchini and bell peppers.
If you're short on time, the cranberry-onion relish can be made a day or two in advance.
Experiment with different types of cheese, such as Gruyere or Emmental, for a unique flavor profile.
