Prepare the Grains: In a medium saucepan, bring 1 cup of water and the oats to a boil. Reduce the heat to low and simmer until the water is absorbed, approximately 8-10 minutes. In a separate saucepan, bring 1 1/2 cups of water and the rinsed millet to a boil. Reduce heat and simmer until the water is absorbed and the millet is tender, about 20-25 minutes.

Preheat Oven: Preheat your oven to 350°F (175°C).

Combine Filling Ingredients: In a large bowl, gently combine the cooked oats, cooked millet, diced onion, carrot, celery, potato, safflower oil, tamari sauce, allspice, nutmeg, cloves, salt, and pepper. Ensure the ingredients are evenly distributed.

Assemble the Pie: Gently press one pie crust into a 9-inch pie pan. Pour the millet and vegetable filling into the prepared crust. Top with the second pie crust and pinch the edges together to seal. Cut a few slits in the top crust to allow steam to escape during baking.

Egg Wash and Bake: Brush the top crust with the beaten egg to create a golden-brown finish. Bake in the preheated oven for approximately 40-45 minutes, or until the crust is beautifully golden brown and the filling is heated through.

For a richer flavor, consider sautéing the diced vegetables in the safflower oil before adding them to the millet and oat mixture.
Feel free to adjust the spices to your liking. A pinch of cinnamon or ginger would also complement the flavors.
If you prefer a flakier crust, use cold butter or shortening when making your pie pastry.
Serve warm with your favorite holiday accompaniments such as ketchup, fruit chutney, or onion marmalade.
