Preheat the oven to 325 degrees F (165 degrees C). (5 minutes)

Cut the chuck roast into 3-inch cubes, removing any excess fat and connective tissue. Season generously with salt and pepper. (10 minutes)

Heat the grapeseed oil in a large Dutch oven over high heat. Sear the beef cubes in batches, ensuring each side is well-browned, about 4 minutes per batch. Reserve the browned beef in a bowl. Reduce the heat to medium, add the diced onion and minced garlic. Cook until softened and just beginning to brown, approximately 10 minutes. (25 minutes)

Add 1 cup of beef broth to the onion mixture and stir well, allowing it to simmer for 1 to 2 minutes. Return the beef to the Dutch oven and pour in the guajillo sauce. Add a little beef broth to the empty bottle, seal, shake well to capture any remaining sauce, and pour over the beef. Pour in enough of the remaining broth to cover the beef. Add the bay leaves and bring to a gentle simmer. (10 minutes)

Cover the Dutch oven and bake in the preheated oven until the beef is fork-tender, about 2 1/2 hours. (150 minutes)

Remove the beef from the sauce and set aside. Discard the bay leaves. Skim off any excess fat from the top of the cooking liquid and bring it to a boil to reduce slightly. (15 minutes)

Shred the beef using two forks and return it to the cooking sauce, allowing it to soak up all the delicious flavors. Serve hot and enjoy! (5 minutes)

For an even richer flavor, consider marinating the beef cubes in a portion of the guajillo sauce for at least 30 minutes before searing.
If you prefer a spicier dish, add a pinch of cayenne pepper or a chopped jalapeño to the onion and garlic mixture.
Serve with your favorite Mexican toppings, such as chopped cilantro, diced onions, salsa, guacamole, and sour cream.
