For a richer flavor, use homemade beef stock. You can also add a splash of red wine when sautéing the onions for added depth. Serve with your favorite toppings: shredded cheese, sour cream or Greek yogurt, chopped cilantro, diced avocado, lime wedges, and crispy tortilla chips. This soup freezes beautifully! Allow it to cool completely before transferring to airtight containers or freezer bags. It will keep for up to 3 months. Adjust the amount of cayenne pepper to control the level of heat. For a milder soup, omit the cayenne pepper altogether.
